Quiche



Tonight for dinner I made quiche. Cindy (Denton's mom) inspired me. When we were in Cali over the holidays she made quiche for lunch, and I was thinking today how amazing it was, so of course, I just had to make it. I tried calling her for the recipe but she wasn't home, so I tried the one in my cook book. I am glad I did. I mean, Cindy's was amazing, but this one, was AMAZING! Here is the recipe: (this makes one 9 in. pie)

Ingredients:

1 recipe for pie crust ( 9 in) or pre-made pie crust (pilsbury)
4 eggs, beaten
1 1/2 cups half-and-half (I used non-fat milk instead)
1/4 cup chopped onions
1/4 t. salt
1/8 t. pepper
dash of nutmeg
2 cups of chopped spinach
1 1/2 cups of shredded cheese of choice
1 T. of flour

Directions:

1. Prepare crust as directed on container or how directions are in crust recipe.

2. Lower oven if needed to 325 degrees. In a medium bowl stir together eggs, half-and-half (or milk) onion, salt, pepper, and nutmeg. Stir in spinach, or meat of choice. In a small bowl toss together the cheese and flour. Add to egg mixture, mix well.

3. Pour egg mixture into hot, baked pastry shell. Bake in oven for 40-45 min or until knife inserted in center comes out clean. If necessary, cover edge of crust with foil to prevent overbrowning. Let stand 10 min before serving and ENJOY!

Denton and I try and read scriptures and pray together every night. Last night one of the versus we read was this one above. This scripture really made an impression on me. What a wonderful gift to be given, to know the mysteries of our heavenly father. To receive inspiration and direction that will not only keep us on the right path, but to help those who have wandered or who have never traveled that path. I think one thing I struggle with is talking about the gospel with others. I have no problem bearing my testimony in sacrament, but for some reason it's hard for me to non-members. I think I feel I need to be missionary to do that. Or I have the thought of offending them. But I guess I will never know, since I never try.

I know this gospel to be true, to be the only true church on this earth today. It is our saviors' church. I am so grateful to my heavenly father, who loves us, to give us a prophet today, who guides and directs his church. I know the prophet is our saviors servant, I know with all my heart he was called of God. I feel it when I hear him speak and read his words. I know the covenants we make in the temple are true, and if we live up to them, they bring us closer to our heavenly father and exaltation. I am thankful for the sealing power, to be sealed to my husband, whom I love with all my heart, and my children for time and all eternity. I am so so sooo grateful for the priesthood and the power it has to heal and to bless. Most of all I am grateful for the blessings I get everyday. I pray that I will be better about sharing the gospel and following the inspiration I receive. I know how I feel because I have the gospel in my life, why wouldn't I want to share that with everyone?

Three months

I can't believe Starlyn is already three months old. I can't believe how fast time is going. It kinda makes me sad. I don't want her to grow up too fast. But I guess that's something I can't stop from happening. (dang it!)

Starlyn is so fun to watch. She is learning how to use her hands. She can grab things that are dangling above her. She has the HUGEST smile on her face when she does. It's pretty awesome. She has also discovered her voice and is a chatter box. It's sooo cute, when Denton gets home and he steals her from me, she will look up at him and just talk and talk. I think she is telling him about her day with mommy and how wonderful I am!! She sure loves her daddy!

Speaking of love, she absolutely loves her baths. We graduated her from the sink to the tub. We got this chair she sits in, almost like a pool chair lounge thing. It's pretty awesome. (I will post pics soon) She just lays there or lounges there, and kicks her legs and smiles huge! I love it.

She has laughed now three times. It's so funny watching her, cause she does it, and then it's like she can't figure out how she did it, so she tries and then gets frustrated with herself..haha! She probably thinks I am crazy also since I am up in her face (ALL THE TIME) trying to get her to laugh again. One day she will laugh all the time, and I look forward to that day. I absolutely love her, and I am so grateful to my heavenly father for blessing me with her.

Yummy!



So one of my goals this year is to be better about cooking. It's hard for me to want to cook since Denton is always gone late into the evening. The benefit to me cooking tho, is he has left overs to take to school, so one, he doesn't have to spend money on food, and two, he doesn't starve. ( for some reason that's usually the choice he picks since he hates spending money)

We have secret santa every year in my family, and my secret santa (my sister Tara) got me a crock pot cooking book. I decided to do stuffed bell peppers today. One of our favorites. Things I love about Crock pot cooking, is......
1. its super easy, just throw everything in the pot and turn it on
2. its an easy clean up, no pots or pans to wash!
3. it makes the house smell DELISH!!!

I recommend to all who does not have a crock pot to go out immediately and invest in one. It will be the best thing you ever did!!!

My new hobby!








My sister Alexa introduced me to a new hobby: Hair clips!!! I love making them, and I have to admit, I think they are pretty good. I hope that I can get good enough to maybe sell them. I found out that there are little boutique stores here that will sell them for me if they think they are good enough. Denton thinks I should start a blog for them and sell them that way. Right now, they are just a hobby. Let me know what you guys think. I am more than happy to make them for whoever wants some.

A look back

This past year sure went by fast. I remember my mom always telling me how fast time goes the older you get. I just never realized how true that really is. Moms always know best!

Looking back on this past year, the birth of our daughter stands out to me. I am so grateful to have her in my life. I am thankful the way everything happened. We tried for eight months to get pregnant. It was the longest eight months of my life, but the wait was worth it. Of course the pregnancy itself was the longest fast nine months of my life..haha... but I am so glad she is finally here. The Lord never gives you a trial you cannot handle. Her birth was really hard for me, but looking back on it, I would not have wanted it any other way. My testimony of priesthood power grew so much stronger. I am so grateful to have a husband who is worthy to hold the priesthood and use it when our family needs it. I am grateful for the spirit! With out his comfort, that day would of been a lot harder than it was. I am grateful to my Heavenly Father for trials he gives me and my family. Without them, I would not be who I am today.

BUDGET!! I have never realized how important that is until this last summer. Denton and I planned on saving X amount this summer with him and I both working. When the summer ended and we went over our finances, we discovered we didn't save anything....haha..... what a slap in the face. Going over our statements, I learned we spend tons of money on things that weren't necessary, so to solve this problem, we decided to put a budget in place. AMAZING, is the word that comes to mind for the word budget. Now that we have one in place, we never stress out, we have money for things we need and we are able to save now. What a blessing! (Only when surprise bills pop out of no where, do we stress out. For ex: When medicaid won't cover expenses)

Things I plan to work on this year:

1. Personal scriptural study
2. Journal writing/blog
3. Personal prayer
4. Service
5. Keeping the house clean
6. Lose 15 pounds/ eat healthy

2010 was a great year. I look forward to what 2011 not only brings me, but my family also. I am grateful for the blessings I have and the blessings the Lord has in store for my family. I am grateful for our families who love and do everything for us. It was so fun to see them during the holidays and we miss them tons. I am grateful for the friends I have made through out my life and love them dearly. Goodbye 2010, and hello 2011!
